Spicy Mixed Veggies Recipe Using Our Signature Grill & Fry Masala | Zee Spices

This hearty and flavorful mixed vegetable stir-fry is packed with fresh veggies and spiced to perfection using Zee Grill & Fry Masala. A simple yet delicious dish, it combines sautéed onions, tomatoes, and classic Indian spices with your favorite vegetables, then finishes with a burst of bold flavor. Ideal as a side or light main, it pairs perfectly with roti, paratha, or rice for a comforting, wholesome meal.

Ingredients

Serves 3-4 people

  • 2 tbsp oil or ghee
  • 1 medium onion – sliced
  • 2 medium tomatoes – chopped
  • 1 tsp ginger-garlic paste
  • 2 cups assorted vegetables (e.g., carrots, beans, peas, cauliflower, capsicum, potatoes) – chopped
  • ½ tsp turmeric powder
  • ½ tsp red chili powder (adjust to taste)
  • ½ tsp salt (adjust to taste)
  • 2–3 tbsp Zee Grill & Fry Masala (add at the end for full flavor)
  • 2–3 tbsp water (if needed for steaming)
  • Fresh coriander – chopped
  • Lemon wedges (optional)

Instructions

  1. Heat Oil:
    • In a pan, heat oil or ghee on medium flame.
  2. Sauté Aromatics:
    • Add sliced onion and sauté until light golden.
    • Stir in ginger-garlic paste and fry for about 30 seconds until fragrant.
  3. Cook Tomatoes:
    • Add chopped tomatoes and cook until soft and mushy.
  4. Add Spices:
    • Stir in turmeric powder, red chili powder, and salt. Mix well.
  5. Add Vegetables:
    • Toss in all the chopped vegetables. Stir-fry for 3–4 minutes on medium-high heat.
  6. Steam-Cook:
    • Add 2–3 tbsp water if needed to help cook the veggies.
    • Cover and cook on low flame for 10–12 minutes, stirring occasionally, until vegetables are tender but not overcooked.
  7. Finish with Zee Grill & Fry Masala:
    • Turn off the heat. Sprinkle Zee Grill & Fry Masala and gently mix to coat the veggies evenly.
  8. Garnish & Serve:
    • Garnish with chopped fresh coriander.
    • Serve hot with rotiparatha, or rice.
    • Add a squeeze of lemon juice if desired for extra freshness.
